Chimay-Now this is what I expected from a Mexican sauce. Right out of the gate, the spice is sharp and precise and has a steady burn. Outside of the habanero, there is vinegar, salt and olive oil. Its a pretty standard hot sauce recipe but done very well with a good pepper. What I can gather from my broken Spanish, the yellow variety of Chimay is the hottest. Wish I could have gotten a bottle of that one too...maybe on the next trip across the border.

Hot Sauce of the Week
Slap Ya Mama Cajun Pepper Sauce-more tang than heat, there is a sweetness to this sauce that can be a bit overpowering but not unpleasant. On the bottom end it tastes a lot like a bbq sauce, likely from the vinegar, salt and garlic. The main ingredient is listed as "Aged Pepper Mash." I guess this is their proprietary pepper mix and they are right to want to protect it. While it treads familiar ground with every other Louisiana style sauce, it is a standout. If you are looking for Louisiana hot sauce flavor that takes the taste up a notch, give this one a go.

Memorial March at Railroad Park
If
you're frustrated and deeply saddened by the death of Jarmaine Walton,
join us in a memorial march on Saturday evening at Railroad Park.
Come be reminded that we live in a city that believes in growth, diversity, and community. Support those that lost a young man and those that are trying to create an environment where violence isn't tolerated.
We'll meet under the main pavilion before 7pm and start our march at 7pm. We'll walk around the park once in solidarity, and then have a moment of silence.

Hot Sauce of the Week
Yum Kax Sabor Ajo Limon-couldn't begin to tell you what is in this tasty little SOB but man it was good. Should have bought a bigger bottle, this one lasted one whole meal. I was expecting it to be a little spicier but the flavor was awesome. It is different, lemon and garlic with a vinegar base, but thoroughly enjoyable.

Happenings, Hot Sauce and Otherwise
Yep, so I'm a loser and I left you hanging on the HSOW last Friday. For that, I am sorry. That being said, I was on vacation with the wife in Mexico so I didn't lose too much sleep about it...
As a result of that trip I now have no less that 6 imported sauces to add to the hopper. There were plenty to choose from and I hope that did a good job of selecting some solid local flavor and not just some touristy garbage. That said, cold beer was $1 on the street and shots were $2.50 so who knows what I really got. We will return to your regularly scheduled HSOW programming next Friday.
In other news, my homie Nick needs some parts to get his '67 Shovel back where it needs to be. If you have any of this stuff, holler at either of us.
