Cholula- this has become the standard at Mexican restaurants in Birmingham. The taste is immediate and unique and there is just enough heat to let you know it is there but it isn't overpowering. A perfect complement to a range of dishes if you want to add some spice, I'm glad I have the big bottle.
It is great on pizza. We served it when I worked at California Pizza Kitchen.
